These air fryer stuffed sweet potatoes are a healthy and delicious meal option, filled with a hearty black bean and corn mixture, and topped with creamy avocado.

- 2 medium sweet potatoes
- 1/2 cup canned black beans, drained and rinsed
- 1/2 cup canned corn, drained
- 1/4 cup diced red onion
- 1/4 cup diced tomatoes
- 1/2 tsp cumin
- 1/4 tsp smoked paprika
- Salt and pepper to taste
- 1 avocado, diced
- 1 tbsp fresh lime juice
- 2 tbsp chopped cilantro (optional)
Instructions
- Wash and dry the sweet potatoes. Pierce each several times with a fork.
- Place sweet potatoes in the air fryer basket and cook at 390°F (200°C) for 35-40 minutes or until fork tender.
- While the sweet potatoes cook, mix black beans, corn, red onion, tomatoes, cumin, paprika, salt, and pepper in a bowl.
- Once the sweet potatoes are cooked, cut them open lengthwise and fluff the inside slightly with a fork.
- Stuff each sweet potato with the black bean and corn mixture.
- Top with diced avocado, a squeeze of lime juice, and chopped cilantro if using.
- Serve warm and enjoy!
Notes
- You can substitute black beans with pinto beans or chickpeas.
- Add shredded cheese or a dollop of sour cream for a non-vegan option.
- Leftovers can be stored in an airtight container for up to 2 days.
