Description

These air fryer stuffed sweet potatoes are a healthy and delicious meal option, filled with a hearty black bean and corn mixture, and topped with creamy avocado.


Ingredients

  • 2 medium sweet potatoes
  • 1/2 cup canned black beans, drained and rinsed
  • 1/2 cup canned corn, drained
  • 1/4 cup diced red onion
  • 1/4 cup diced tomatoes
  • 1/2 tsp cumin
  • 1/4 tsp smoked paprika
  • Salt and pepper to taste
  • 1 avocado, diced
  • 1 tbsp fresh lime juice
  • 2 tbsp chopped cilantro (optional)

Instructions

  1. Wash and dry the sweet potatoes. Pierce each several times with a fork.
  2. Place sweet potatoes in the air fryer basket and cook at 390°F (200°C) for 35-40 minutes or until fork tender.
  3. While the sweet potatoes cook, mix black beans, corn, red onion, tomatoes, cumin, paprika, salt, and pepper in a bowl.
  4. Once the sweet potatoes are cooked, cut them open lengthwise and fluff the inside slightly with a fork.
  5. Stuff each sweet potato with the black bean and corn mixture.
  6. Top with diced avocado, a squeeze of lime juice, and chopped cilantro if using.
  7. Serve warm and enjoy!

Notes

  • You can substitute black beans with pinto beans or chickpeas.
  • Add shredded cheese or a dollop of sour cream for a non-vegan option.
  • Leftovers can be stored in an airtight container for up to 2 days.
