This Bacon Salad is the perfect mix of crispy, salty, and fresh. Smoky bacon pieces are tossed with crunchy greens, juicy tomatoes, creamy avocado, and a simple homemade dressing. It’s satisfying enough to serve as a main dish or as a bold side for any occasion.
Ingredients

6 slices bacon, cooked until crispy and chopped

6 cups mixed salad greens (romaine, spinach, arugula, or your favorite mix)

1 avocado, diced

1 cup cherry tomatoes, halved

1/2 red onion, thinly sliced

1/2 cup shredded cheddar or crumbled blue cheese (optional)

1/4 cup sunflower seeds or chopped pecans (optional)

Salt and pepper, to taste
For the dressing:

1/4 cup olive oil

2 tbsp apple cider vinegar

1 tsp Dijon mustard
-
1 tsp honey

Salt and black pepper, to taste
Instructions

In a small bowl or jar, whisk together the olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper until smooth.

In a large salad bowl, combine salad greens, cherry tomatoes, red onion, avocado, and cheese (if using).

Sprinkle the chopped bacon and sunflower seeds (if using) over the top.

Drizzle with the dressing just before serving and toss gently to combine.

Taste and season with additional salt and pepper if needed.
