Ingredients
-
For the brownies:
-
1/2 cup unsalted butter, melted
-
1 cup granulated sugar
-
2 large eggs
-
1 teaspoon vanilla extract
-
1/2 cup all-purpose flour
-
1/3 cup cocoa powder
-
1/4 teaspoon salt
-
1/2 teaspoon baking powder
-
-
For the cheesecake layer:
-
8 oz cream cheese, softened
-
1/4 cup granulated sugar
-
1 large egg
-
1 teaspoon vanilla extract
-
2 tablespoons Baileys Irish Cream
-
1 tablespoon all-purpose flour
-
Instructions
-
Preheat the oven to 350°F (175°C). Grease and line a 9×9-inch baking pan with parchment paper, leaving a slight overhang for easy removal later.
-
Make the brownie batter: In a medium bowl, combine the melted butter and sugar, and stir until smooth. Add the eggs and vanilla extract, and whisk until fully incorporated.
-
Sift in the flour, cocoa powder, salt, and baking powder. Stir until just combined, being careful not to overmix.
-
Pour the brownie batter into the prepared baking pan and spread it evenly. Set aside.
-
Make the cheesecake layer: In a separate bowl, beat the softened cream cheese with the sugar until smooth and creamy. Add the egg, vanilla extract, Baileys Irish Cream, and flour. Mix until well combined and the batter is smooth.
-
Assemble the brownies: Carefully spoon the cheesecake mixture over the brownie batter, spreading it evenly to cover the top.
-
Use a knife or skewer to gently swirl the cheesecake mixture into the brownie batter, creating a marbled effect.
-
Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out mostly clean (a few crumbs are fine, but it shouldn’t be wet).
-
Let the brownies cool completely in the pan before removing and cutting them into squares.
-
Serve and enjoy the rich, indulgent combination of chocolate and Baileys cheesecake!
Notes
-
You can add more Baileys to the cheesecake mixture for a stronger flavor, but be cautious, as too much liquid may affect the texture of the cheesecake layer.
-
For a different twist, you can sprinkle some mini chocolate chips on top before baking.
-
These brownies can be stored in an airtight container in the fridge for up to 4-5 days.
