Description

This Baked Boursin Spaghetti Squash recipe is a creamy, flavorful, and low-carb alternative to traditional pasta dishes. Roasted spaghetti squash strands are combined with rich, soft Boursin cheese flavored with garlic and fine herbs, roasted cherry tomatoes, and garlic, then topped with Parmesan and fresh herbs for an irresistible main course perfect for vegetarians and those seeking gluten-free options.

Ingredients

Scale

Main Ingredients

  • 1 medium spaghetti squash (about 2 ½ to 3 pounds)
  • 1 tablespoon olive oil
  • 1 (5.2-ounce) round of Boursin cheese (any flavor, such as Garlic & Fine Herbs)
  • 1 cup cherry tomatoes (halved)
  • 2 cloves garlic (minced)
  • ¼ teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 tablespoons grated Parmesan cheese (optional)
  • Chopped fresh basil or parsley for garnish

Instructions

  1. Preheat and Prepare Squash: Preheat the oven to 400°F. Carefully slice the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle the cut sides with olive oil and season with salt and pepper.
  2. Roast Spaghetti Squash: Place the squash halves cut side down on a parchment-lined baking sheet and roast for 35 to 40 minutes, until the flesh is tender and can be easily shredded with a fork.
  3. Prepare Boursin Bake: While the squash roasts, place the Boursin cheese in the center of a small baking dish. Surround it with cherry tomatoes, minced garlic, crushed red pepper flakes (if using), and drizzle with olive oil.
  4. Bake Cheese and Tomatoes: Bake the Boursin and tomato mixture alongside the squash for the last 20 minutes of the squash roasting time. This allows the cheese to soften and the tomatoes to blister.
  5. Scoop and Combine: Once cool enough to handle, use a fork to scrape the spaghetti squash flesh into strands and transfer them to a large mixing bowl. Add the baked Boursin, tomatoes, and garlic mixture, stirring gently until the squash is well coated and creamy.
  6. Season and Serve: Taste and season with additional salt and black pepper as needed. Sprinkle with grated Parmesan and garnish with fresh chopped basil or parsley. Serve warm for a comforting, creamy dish.

Notes

  • For added protein, stir in cooked chicken or shrimp before serving.
