6 large eggs

1/2 cup cottage cheese (any fat content)

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon garlic powder (optional)

1/4 cup shredded cheddar or mozzarella (optional)

Butter or cooking spray (for greasing)

Optional add-ins: chopped spinach, diced bell peppers, green onions, or cooked bacon
Instructions

Preheat Oven: Set your oven to 375°F (190°C). Lightly grease a muffin tin or small baking dish.

Mix Eggs & Cheese: In a large bowl, whisk together eggs, cottage cheese, salt, pepper, and garlic powder. Stir in shredded cheese and any add-ins if using.

Pour into Pan: Pour mixture evenly into muffin cups (about 3/4 full) or into the greased baking dish.

Bake:

Muffin tin: bake for 18–22 minutes

Baking dish: bake for 25–30 minutes
Bake until eggs are puffed and set in the center.

Cool & Serve: Let cool for 5 minutes before removing. Serve warm, or let cool completely for meal prep.
Notes

Store in the fridge for up to 4 days in an airtight container.

Reheat in the microwave or air fryer.

Add red pepper flakes for a little heat.
