- 4 boneless, skinless chicken breasts
- 1 cup buttermilk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups cornflakes, crushed
- 1/2 cup panko breadcrumbs
- 1/2 teaspoon cayenne pepper (optional)
- Cooking spray or olive oil spray
- 1/3 cup honey
- 2 tablespoons hot sauce (e.g., Frank’s RedHot)
- 1 tablespoon butter
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and place a wire rack on top.
- In a bowl, whisk together buttermilk, garlic powder, onion powder, paprika, salt, and pepper. Add chicken and marinate for at least 30 minutes or overnight.
- In another bowl, mix crushed cornflakes, panko breadcrumbs, and cayenne pepper.
- Remove chicken from marinade, letting excess drip off. Press into cornflake mixture, coating both sides thoroughly.
- Place chicken on the wire rack. Lightly spray tops with cooking spray.
- Bake for 25-30 minutes or until chicken is cooked through and coating is golden and crispy.
- While chicken bakes, combine honey, hot sauce, and butter in a small saucepan over low heat. Stir until melted and combined.
- Drizzle hot honey over chicken before serving, or serve on the side as a dip.
Notes
- For extra crispiness, toast the cornflakes slightly before using.
- Adjust hot sauce amount to your spice preference.
- Chicken thighs can be used instead of breasts if preferred.
