Ingredients
Scale
Chicken Skewers
- 1 1/2 pounds boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 tablespoon soy sauce
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- Wooden skewers (soaked if using bamboo)
Bang Bang Sauce
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1 tablespoon sriracha (or to taste)
- 1 tablespoon honey (optional for sweetness)
Instructions
- Marinate the Chicken: In a large bowl, toss the bite-sized chicken pieces with olive oil, soy sauce, garlic powder, and salt ensuring the chicken is well-coated with the marinade.
- Prepare the Skewers: Thread the marinated chicken pieces evenly onto the wooden skewers. Set aside while you prepare the sauce and heat the grill.
- Mix the Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and honey (if using) until smooth and creamy. Adjust the sriracha amount to your preferred spice level.
- Preheat the Grill: Heat your grill or grill pan over medium-high heat to ensure it’s hot enough for cooking the chicken evenly and achieving a slight char.
- Grill the Chicken Skewers: Place the skewers on the grill and cook for 10–12 minutes, turning occasionally. Brush the chicken with some of the bang bang sauce during the last few minutes to infuse more flavor and help caramelize the exterior.
- Serve: Remove the chicken skewers from the grill once fully cooked and slightly charred. Drizzle with additional bang bang sauce or serve the remaining sauce on the side for dipping. Garnish with chopped green onions or sesame seeds if desired.
Notes
- Serve these skewers over rice or alongside a fresh salad for a complete meal.
- For a lighter sauce alternative, substitute Greek yogurt for mayonnaise.
- Adjust the amount of sriracha to control the spice level according to your taste.
- If you prefer not to grill, you can bake or air fry the skewers at 400°F (200°C) for 15–18 minutes.
