Description

BBQ Beer-Marinated Chicken Skewers are juicy, flavorful grilled skewers made with tender chicken soaked in a zesty beer-based marinade, then char-grilled and basted with barbecue sauce. Perfect for cookouts and summer dinners.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1.5-inch cubes
  • 1 cup beer (lager or pale ale works well)
  • 1/4 cup olive oil
  • 1/4 cup soy sauce
  • 2 tbsp Worcestershire sauce
  • 2 tbsp brown sugar
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 cup barbecue sauce (your favorite variety)
  • Wooden or metal skewers

Instructions

  1. In a large bowl, whisk together beer, olive oil, soy sauce, Worcestershire sauce, brown sugar, garlic, smoked paprika, salt, and pepper.
  2. Add chicken cubes to the marinade, cover, and refrigerate for at least 2 hours or overnight for maximum flavor.
  3. If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning.
  4. Preheat grill to medium-high heat.
  5. Thread marinated chicken pieces onto skewers, leaving a little space between each piece for even cooking.
  6. Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked through and slightly charred.
  7. Brush with barbecue sauce during the last few minutes of grilling for a sticky, flavorful glaze.
  8. Remove from grill and let rest a few minutes before serving.

Notes

  • For extra flavor, use a bold craft beer in the marinade.
  • Serve with grilled vegetables, corn on the cob, or potato salad.
  • Can be cooked under a broiler if a grill is not available.
