- 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1.5-inch cubes
- 1 cup beer (lager or pale ale works well)
- 1/4 cup olive oil
- 1/4 cup soy sauce
- 2 tbsp Worcestershire sauce
- 2 tbsp brown sugar
- 3 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1 cup barbecue sauce (your favorite variety)
- Wooden or metal skewers
Instructions
- In a large bowl, whisk together beer, olive oil, soy sauce, Worcestershire sauce, brown sugar, garlic, smoked paprika, salt, and pepper.
- Add chicken cubes to the marinade, cover, and refrigerate for at least 2 hours or overnight for maximum flavor.
- If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning.
- Preheat grill to medium-high heat.
- Thread marinated chicken pieces onto skewers, leaving a little space between each piece for even cooking.
- Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked through and slightly charred.
- Brush with barbecue sauce during the last few minutes of grilling for a sticky, flavorful glaze.
- Remove from grill and let rest a few minutes before serving.
Notes
- For extra flavor, use a bold craft beer in the marinade.
- Serve with grilled vegetables, corn on the cob, or potato salad.
- Can be cooked under a broiler if a grill is not available.
