- 1 medium head cauliflower, cut into florets
- 1/2 cup flour (all-purpose or gluten-free)
- 1/2 cup plant-based milk
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/4 tsp salt
- 1 cup BBQ sauce
- 1 tbsp olive oil (for baking)
- 2 cups cooked brown rice or quinoa
- 1 cup shredded red cabbage
- 1 carrot, shredded
- 1 avocado, sliced
- 1/4 cup chopped green onions
- Optional dressing: vegan ranch or tahini dressing
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a bowl, whisk together flour, plant milk, garlic powder, smoked paprika, and salt to form a batter.
- Dip cauliflower florets into the batter, letting excess drip off, and place on the baking sheet.
- Bake for 20 minutes, flipping halfway through.
- Remove from oven, toss the florets in BBQ sauce, and return to the oven for 10 more minutes.
- Assemble bowls with cooked rice or quinoa as the base. Top with BBQ cauliflower, cabbage, carrot, avocado, and green onions.
- Drizzle with vegan ranch or tahini dressing if desired. Serve immediately.

- Use air fryer for crispier bites (cook at 400°F for 15–18 minutes).
- Customize with your favorite veggies or grains.
- Make it spicier by adding hot sauce to the BBQ mixture.
