Description

BBQ Cauliflower Bites Bowl is a hearty, flavor-packed vegan meal featuring crispy BBQ cauliflower bites served over a nourishing base of grains and veggies, all drizzled with creamy dressing.


Ingredients

  • 1/2 cup flour (all-purpose or gluten-free)
  • 1/2 cup plant-based milk
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp salt
  • 1 cup BBQ sauce
  • 1 tbsp olive oil (for baking)
  • 2 cups cooked brown rice or quinoa
  • 1 cup shredded red cabbage
  • 1 carrot, shredded
  • 1 avocado, sliced
  • 1/4 cup chopped green onions
  • Optional dressing: vegan ranch or tahini dressing

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, plant milk, garlic powder, smoked paprika, and salt to form a batter.
  3. Dip cauliflower florets into the batter, letting excess drip off, and place on the baking sheet.
  4. Bake for 20 minutes, flipping halfway through.
  5. Remove from oven, toss the florets in BBQ sauce, and return to the oven for 10 more minutes.
  6. Assemble bowls with cooked rice or quinoa as the base. Top with BBQ cauliflower, cabbage, carrot, avocado, and green onions.
  7. Drizzle with vegan ranch or tahini dressing if desired. Serve immediately.
