For the Beef Stroganoff:
- 1 lb beef sirloin, thinly sliced
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 cup beef broth
- 1 cup sour cream
- Salt and pepper to taste
For the Egg Noodles:
- 8 oz egg noodles
- Salt for boiling water
- 2 tablespoons butter
- Fresh parsley, chopped for garnish
Instructions
- Sear the Beef: In a large skillet, heat olive oil over medium-high heat. Add the sliced beef and cook until browned. Remove beef from skillet and set aside.
- Sauté Onions and Mushrooms: In the same skillet, add more oil if needed and sauté onions until translucent. Add garlic and mushrooms, cooking until mushrooms are browned.
- Add Broth and Sour Cream: Pour in beef broth and bring to a simmer. Stir in sour cream and return beef to the skillet. Cook until heated through.
- Cook Egg Noodles: In a separate pot, cook egg noodles according to package instructions. Drain and toss with butter.
- Serve: Serve the beef stroganoff over the cooked egg noodles. Garnish with chopped parsley and enjoy!

- You can substitute the beef sirloin with tenderloin or ribeye for a richer flavor.
