Description

This decadent apple pie stuffed cheesecake combines two classic desserts into one: creamy vanilla cheesecake with a spiced apple pie filling and buttery graham cracker crust.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • For the apple pie filling:
  • 3 medium apples, peeled and diced

  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon lemon juice
  • 1 tablespoon cornstarch
  • For the cheesecake:
  • 24 oz (3 packages) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • For topping (optional):
  • Whipped cream or caramel sauce
  • Additional apple slices or crumble topping

Instructions

  1. Preheat oven to 325°F (160°C). Grease a 9-inch springform pan and wrap the outside with foil for a water bath.
  2. Mix graham cracker crumbs, sugar, and melted butter for the crust. Press into the bottom of the pan. Bake for 10 minutes and set aside to cool.
  3. In a saucepan, melt butter over medium heat. Add apples, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Cook for 8–10 minutes until soft and thickened. Let cool slightly.
  4. In a large bowl, beat cream cheese until smooth. Add sugar, eggs (one at a time), sour cream, and vanilla. Mix until creamy and lump-free.
  5. Pour half of the cheesecake batter over the crust. Spoon half of the apple filling evenly on top. Add the remaining cheesecake batter, then top with the rest of the apple mixture.
  6. Place the springform pan in a larger pan filled with 1 inch of hot water. Bake for 55–65 minutes, or until the center is just set.
  7. Turn off oven, crack the door, and let cheesecake cool inside for 1 hour. Then chill for at least 4 hours or overnight.
  8. Top with whipped cream, caramel sauce, or extra apple pie filling before serving if desired.
