Ingredients

Units Scale

For the Chicken:

  • 2 boneless, skinless chicken breasts, diced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

For the Carbonara Sauce:

  • 8 oz spaghetti
  • 4 large eggs
  • 1 cup grated Parmesan cheese
  • 8 slices of bacon, chopped
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook the Chicken: In a skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper, then cook until golden brown and cooked through. Set aside.
  2. Prepare the Pasta: Cook spaghetti according to package instructions until al dente. Drain and reserve 1 cup of pasta water.
  3. Make the Sauce: In a bowl, whisk together eggs, Parmesan, salt, and pepper. In the same skillet used for chicken, cook bacon until crispy. Add garlic and cook until fragrant. Reduce heat to low.
  4. Combine Everything: Add cooked spaghetti to the skillet with bacon. Pour the egg mixture over the pasta, tossing quickly to combine and coat the pasta. If needed, add reserved pasta water to loosen the sauce.
  5. Serve: Add cooked chicken to the pasta and toss to combine. Serve hot, garnished with chopped parsley.

Notes

  • Be careful when adding the egg mixture to the pasta to avoid scrambling the eggs.
  • For extra creaminess, you can add a splash of heavy cream to the sauce.
