- 6 slices of bread (day-old preferred), cut into 1-inch cubes
- 3 large eggs
- 1/2 cup milk
- 1/4 cup maple syrup or honey
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg (optional)
- 1/4 tsp salt
- Butter or cooking spray (for greasing muffin tin)
- Powdered sugar or extra maple syrup for serving (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin with butter or cooking spray.
- In a large bowl, whisk together eggs, milk, maple syrup, vanilla, cinnamon, nutmeg (if using), and salt.
- Add bread cubes to the egg mixture and gently stir to coat. Let soak for 5 minutes.
- Divide the mixture evenly among the muffin cups, pressing down slightly to compact.
- Bake for 20–25 minutes, or until golden brown and set.
- Cool for a few minutes in the pan, then run a knife around each cup to release.
- Serve warm with powdered sugar or maple syrup on top if desired.
Notes
- Great for using up leftover bread or rolls.
- Add chocolate chips, berries, or chopped nuts for variation.
- Can be made ahead and reheated in the microwave or oven.
