Description

French Toast Muffin Cups are a quick and easy breakfast option that transforms classic French toast into individual servings baked in a muffin tin—perfectly crisp on the outside and soft on the inside.

Ingredients

Units Scale
  • 6 slices of bread (day-old preferred), cut into 1-inch cubes
  • 3 large eggs
  • 1/2 cup milk
  • 1/4 cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg (optional)
  • 1/4 tsp salt
  • Butter or cooking spray (for greasing muffin tin)
  • Powdered sugar or extra maple syrup for serving (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin with butter or cooking spray.
  2. In a large bowl, whisk together eggs, milk, maple syrup, vanilla, cinnamon, nutmeg (if using), and salt.
  3. Add bread cubes to the egg mixture and gently stir to coat. Let soak for 5 minutes.
  4. Divide the mixture evenly among the muffin cups, pressing down slightly to compact.
  5. Bake for 20–25 minutes, or until golden brown and set.
  6. Cool for a few minutes in the pan, then run a knife around each cup to release.
  7. Serve warm with powdered sugar or maple syrup on top if desired.

Notes

  • Great for using up leftover bread or rolls.
  • Add chocolate chips, berries, or chopped nuts for variation.
  • Can be made ahead and reheated in the microwave or oven.
