Description

These Birthday Sugar Cookies are soft, buttery, and filled with rainbow sprinkles! They have that classic sugar cookie flavor with a chewy center and slightly crisp edges — no rolling or cutting required. Perfect for birthdays or anytime you want to celebrate with cookies!


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened

  • 1 cup granulated sugar

  • 1 large egg

  • 1 tsp vanilla extract

  • 1/2 tsp almond extract (optional, for cake batter flavor)

  • 2 1/4 cups all-purpose flour

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1/2 cup rainbow sprinkles (jimmies work best)


Instructions

  1. Preheat Oven:
    Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

  2. Cream Butter & Sugar:
    In a large bowl, beat the butter and sugar together until light and fluffy (2–3 minutes).

  3. Add Egg & Flavoring:
    Mix in the egg, vanilla, and almond extract (if using) until smooth.

  4. Add Dry Ingredients:
    In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture and mix until combined.

  5. Stir in Sprinkles:
    Gently fold in the rainbow sprinkles.

  6. Scoop Dough:
    Scoop rounded tablespoons of dough and roll into balls. Place 2 inches apart on prepared baking sheets.

  7. Bake:
    Bake for 9–11 minutes, or until the edges are just barely golden. Centers may look slightly underbaked — that’s perfect!

  8. Cool:
    Let cookies cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.


Notes

  • Don’t overbake! These cookies stay soft and chewy when slightly underdone.

  • Jimmies (long sprinkles) work best — nonpareils tend to bleed color into the dough.
