Description

Pasta Salad:

  • 8 oz bow tie pasta
  • 1 cup cherry tomatoes, halved
  • 1/2 English cucumber, diced
  • 1/2 red bell pepper, chopped
  • 1/4 red onion, thinly sliced
  • 1/4 cup black olives, sliced
  • 1/4 cup feta cheese, crumbled

Dressing:

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Cook Pasta: Boil water, add pasta, and cook until al dente. Drain and rinse under cold water.
  2. Prepare Veggies: In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, olives, and feta cheese.
  3. Make Dressing: In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, salt, and pepper.
  4. Combine: Add cooked pasta to the veggie mixture, pour dressing over it, and toss to coat evenly.
