Description

Broccoli Cheddar Mac and Cheese with Chicken is a creamy, comforting dish that combines tender pasta, juicy chicken, crisp broccoli, and a rich cheddar cheese sauce for a hearty and satisfying meal.


Ingredients

  • 2 cups elbow macaroni or pasta of choice
  • 2 cups broccoli florets
  • 2 cups cooked, diced chicken breast
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups milk
  • 1/2 cup heavy cream (optional for extra creaminess)
  • 2 cups shredded sharp cheddar cheese
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and black pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Cook pasta according to package directions. Add broccoli during the last 2–3 minutes of cooking. Drain and set aside.
  2. In a large saucepan, melt butter over medium heat. Whisk in flour and cook for 1–2 minutes until golden and bubbling.
  3. Slowly whisk in milk and cream, stirring constantly until the sauce thickens, about 5 minutes.
  4. Add garlic powder, onion powder, salt, and pepper. Stir in cheddar and Parmesan cheese until melted and smooth.
  5. Stir in cooked pasta, broccoli, and diced chicken. Mix well until everything is evenly coated in the sauce.
  6. Serve immediately, or transfer to a baking dish, top with extra cheese, and broil for 2–3 minutes for a golden top.

Notes

  • Use rotisserie chicken for quick prep.
  • Substitute whole milk or non-dairy milk based on preference.
  • Add breadcrumbs on top before broiling for a crunchy topping.
