For the Cajun Seasoning:

- 1 teaspoon salt
For the Jambalaya:
- 1 tablespoon olive oil
- 12 oz andouille sausage, sliced
- 1 lb boneless, skinless chicken thighs, diced
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 3 cloves garlic, minced
- 1 cup long-grain white rice
- 1 can (14.5 oz) diced tomatoes
- 2 cups chicken broth
- 2 teaspoons Worcestershire sauce
- 2 bay leaves
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Make the Cajun Seasoning: In a small bowl, mix together all the Cajun seasoning ingredients until well combined. Set aside.
- Cook the Sausage and Chicken: In a large Dutch oven or pot, heat the olive oil over medium-high heat. Add the sliced andouille sausage and cook until browned. Then, add the diced chicken and cook until browned on all sides. Remove the meats and set aside.
- Saute the Vegetables: In the same pot, add more oil if needed and sauté the onion, bell peppers, and garlic until softened.
- Add Remaining Ingredients: Stir in the rice and coat with the vegetable mixture. Add the diced tomatoes, chicken broth, Worcestershire sauce, bay leaves, and reserved Cajun seasoning. Season with salt and pepper.
- Simmer: Bring the mixture to a boil, then reduce heat to low. Cover and simmer for about 20-25 minutes, or until the rice is cooked and liquid is absorbed.
- Serve: Discard the bay leaves, fluff the jambalaya with a fork, and serve hot, garnished with chopped parsley.
Notes
- For extra heat, add more cayenne pepper to the Cajun seasoning.
- This dish is even more flavorful when made ahead and reheated the next day.
