Description
Caramel Apple Empanadas are a sweet and flaky dessert filled with tender cinnamon-spiced apples and gooey caramel, wrapped in pastry dough and baked or fried to golden perfection.

- 2 cups peeled and diced apples (Granny Smith or Honeycrisp)
- 1/4 cup brown sugar
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1 tbsp cornstarch
- 1 tbsp water
- 1/2 tsp vanilla extract
- 1/4 cup caramel sauce (plus more for drizzling)
- 1 package (14 oz) refrigerated pie crusts or empanada dough discs
- 1 egg (for egg wash)
- 1 tbsp sugar (for sprinkling)
Instructions
- Preheat oven to 375°F (190°C) or heat oil if frying.
- In a saucepan over medium heat, combine apples, brown sugar, cinnamon, and nutmeg. Cook for 5–7 minutes until apples are soft.
- Mix cornstarch with water and stir into the apple mixture. Cook until thickened, then remove from heat and stir in vanilla extract and caramel sauce. Let cool slightly.
- Roll out dough and cut into 4- to 5-inch circles if not using pre-cut discs.
- Spoon about 1 to 2 tablespoons of apple filling into the center of each disc.
- Fold dough over and seal edges with a fork.
- Brush empanadas with egg wash and sprinkle with sugar.
- Place on a baking sheet lined with parchment paper and bake for 20–25 minutes or until golden brown. Alternatively, fry in hot oil until golden.
- Let cool slightly and drizzle with extra caramel sauce before serving.
Notes
- Use store-bought caramel or make your own.
- Serve warm with a scoop of vanilla ice cream.
- Empanadas can be made ahead and reheated in the oven.
