- For the carne asada:
- 1 lb flank or skirt steak
- 1/4 cup orange juice
- 2 tbsp lime juice
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper, to taste
- For the fries:
- 1 bag (about 28 oz) frozen French fries (or homemade fries)
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- Toppings:
- 1/2 cup sour cream
- 1/2 cup guacamole
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped red onion
- 1/4 cup diced tomatoes
- 1 jalapeño, sliced (optional)
- Hot sauce (optional)
Instructions
- Marinate the steak: In a bowl or zip-top bag, mix orange juice, lime juice, olive oil, garlic, chili powder, cumin, paprika, salt, and pepper. Add the steak and marinate for at least 1 hour, up to overnight in the fridge.
- Cook the fries: Bake or air fry the French fries according to the package directions until golden and crispy. Spread them out on a large oven-safe platter or sheet pan.
- Grill the steak: Remove the steak from the marinade and grill or sear it in a hot skillet over medium-high heat for 4–5 minutes per side, or until cooked to your liking. Let it rest for 5 minutes, then slice thinly against the grain.
- Assemble the fries: Preheat your oven to 400°F (200°C). Sprinkle shredded cheeses over the hot fries and place in the oven for about 5 minutes, or until cheese is melted and bubbly.
- Add the toppings: Top cheesy fries with sliced carne asada, sour cream, guacamole, red onion, tomatoes, cilantro, jalapeños, and hot sauce as desired.
- Serve immediately and enjoy while hot!

- Want to make it lighter? Use baked fries or sweet potato fries.
