- 1 pound flank or skirt steak
- 1/4 cup olive oil
- 1/4 cup lime juice (about 2 limes)
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 small corn tortillas
- 1/4 cup chopped fresh cilantro
- 1/4 cup finely chopped onion
- 1 lime, cut into wedges
- Optional toppings: salsa, guacamole, sour cream
Instructions
- In a bowl, whisk together olive oil, lime juice, garlic, cumin, chili powder, paprika, salt, and pepper. Pour the marinade over the steak and let it marinate for at least 30 minutes, or up to 2 hours in the fridge.
- Preheat a grill or grill pan to medium-high heat. Remove the steak from the marinade and grill for 4–5 minutes per side, or until the steak reaches your desired doneness (internal temperature of 130°F for medium-rare). Remove from the grill and let the steak rest for 5 minutes.
- Thinly slice the steak against the grain.
- Warm the tortillas in a dry skillet or on the grill.
- To assemble tacos, place a few slices of carne asada on each tortilla. Top with chopped onion, cilantro, and a squeeze of lime juice. Add optional toppings like salsa, guacamole, or sour cream if desired.
- Serve immediately with extra lime wedges on the side.
Notes
- For extra flavor, marinate the meat overnight.
- Flank or skirt steak are the best cuts for carne asada, but you can use other cuts like sirloin or ribeye.
- If you prefer a smokier flavor, grill the meat over charcoal or add wood chips to your grill.
