Description

These traditional British cheese savoury sandwiches are a staple at afternoon tea. Made with a flavorful mix of grated cheese, grated carrot, mayonnaise, and a touch of onion, they’re creamy, slightly tangy, and wonderfully satisfying. Serve them on soft sandwich bread with the crusts cut off for that classic tea-time presentation.

Ingredients

  • 1 1/2 cups (150g) sharp cheddar cheese, grated

  • 1 small carrot, peeled and grated

  • 2 tablespoons mayonnaise

  • 1 teaspoon English mustard (optional)

  • 1-2 tablespoons finely chopped red or spring onion

  • Salt and black pepper, to taste

  • 8 slices soft white or wholemeal sandwich bread

  • Butter, for spreading (optional)

Instructions

  • In a mixing bowl, combine the grated cheese, grated carrot, chopped onion, and mayonnaise.

  • Add English mustard, if using, and season with salt and black pepper to taste. Mix until everything is well combined.

  • Lightly butter the slices of bread if desired.

  • Spread the cheese savoury mixture evenly over half the bread slices. Top with the remaining slices.

  • Gently press down, then trim the crusts and cut each sandwich into quarters or fingers.

  • Serve immediately or cover and refrigerate until serving.

Notes

  • You can use red Leicester or a mix of cheeses for a deeper flavor.

  • Add a pinch of paprika or chives for extra flavor.

  • Make the filling ahead of time and store in the fridge for up to 2 days.
