Ingredients
-
1 tablespoon olive oil
-
1 pound ground beef
-
1 small onion, diced
-
2 cloves garlic, minced
-
2 cups beef broth
-
1 (15 oz) can tomato sauce
-
1 (10 oz) can diced tomatoes with green chilies (like Rotel)
-
2 teaspoons Italian seasoning
-
1/2 teaspoon paprika
-
Salt and pepper, to taste
-
2 cups uncooked pasta (elbow or rotini work great)
-
1 1/2 cups shredded cheddar cheese
-
1/2 cup shredded mozzarella cheese
-
Fresh parsley, chopped (for garnish, optional)
Instructions
-
In a large skillet over medium heat, heat the olive oil. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
-
Add the diced onion and cook until softened, about 3–4 minutes. Stir in garlic and cook for another 30 seconds.
-
Pour in beef broth, tomato sauce, diced tomatoes, Italian seasoning, paprika, salt, and pepper. Stir to combine.
-
Stir in the uncooked pasta. Bring the mixture to a simmer, cover, and cook for 12–15 minutes, or until pasta is tender, stirring occasionally.
-
Once pasta is cooked, stir in cheddar cheese until melted. Sprinkle mozzarella over the top, cover again for 2–3 minutes to melt.
-
Garnish with chopped parsley, if using. Serve hot!
Notes
-
You can substitute ground turkey or chicken for a lighter version.
-
Add chopped bell peppers or mushrooms for extra veggies.
-
Use any short pasta shape you have on hand.
