Cheesy Ranch Oven Roasted Potatoes are crispy on the outside, soft on the inside, and bursting with ranch flavor. Tossed with seasoning and topped with melty cheddar cheese, they’re the perfect side for burgers, grilled chicken, or just about anything. Simple ingredients, big flavor!
Ingredients

2 lbs baby potatoes (or red/yellow potatoes), quartered

2 tablespoons olive oil

1 (1 oz) packet ranch seasoning mix

1/2 teaspoon garlic powder

1/4 teaspoon black pepper

1 1/2 cups shredded cheddar cheese

Optional: chopped parsley, green onions, or bacon bits for topping
Instructions

Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

Season the Potatoes: In a large bowl, toss the potatoes with olive oil, ranch seasoning, garlic powder, and black pepper until evenly coated.

Roast: Spread the potatoes out in a single layer on the baking sheet. Roast for 25–30 minutes, flipping halfway through, until golden and fork-tender.

Add Cheese: Sprinkle the shredded cheddar cheese evenly over the potatoes. Return to the oven for 5 more minutes, or until cheese is melted and bubbly.

Serve: Remove from oven and top with chopped parsley, green onions, or bacon bits if desired. Serve hot.

Make them extra crispy by spreading the potatoes out so they’re not crowded.
