Description

This Cheesy Turkey and Sweet Potato Skillet is a quick, nutritious, and flavorful one-pan meal perfect for busy weeknights. Featuring lean ground turkey cooked with garlic, onions, and yellow pepper, combined with tender sweet potatoes and melted mozzarella cheese, it offers a satisfying blend of protein, veggies, and comforting flavors. The dish is topped with fresh parsley and can be easily modified to suit paleo or Whole30 diets by omitting the cheese.

Ingredients

Scale

Main Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 pound free-range extra-lean ground turkey (or grass-fed ground beef)
  • 1 teaspoon garlic, minced
  • ½ cup onions, diced
  • ½ cup yellow pepper, diced
  • 1½ cups sweet potato, diced
  • Salt and freshly ground black pepper, to taste
  • A pinch of red chili flakes (optional)
  • ½ cup shredded mozzarella cheese (omit for Whole30 or Paleo)
  • Fresh parsley, for garnishing (optional)

Instructions

  1. Heat Skillet: In a cast iron skillet, heat the olive oil over medium-high heat to prepare for cooking the turkey and vegetables.
  2. Cook Turkey: Add the ground turkey and minced garlic to the skillet. Break up the turkey using a spatula and cook for about 5 minutes until browned and cooked through.
  3. Add Vegetables: Stir in the diced onions and yellow peppers. Cook together until the onions become soft and translucent.
  4. Add Sweet Potatoes: Mix in the diced sweet potatoes along with the red chili flakes, salt, and freshly ground black pepper to taste. Cover the skillet and cook until the sweet potatoes are tender, approximately 8-10 minutes.
  5. Preheat Oven: While the sweet potatoes are cooking, preheat your oven to 400ºF (200ºC) to prepare for melting the cheese.
  6. Add Cheese: Once the sweet potatoes are tender, sprinkle shredded mozzarella cheese evenly over the skillet’s contents.
  7. Melt Cheese in Oven: Place the skillet into the preheated oven and bake for 5-7 minutes, or until the cheese is fully melted and bubbly.
  8. Garnish and Serve: Remove the skillet from the oven, garnish with fresh parsley if desired, and serve immediately for a warm, hearty meal.

Notes

  • For a dairy-free or Whole30-compliant version, omit the mozzarella cheese.
  • You can substitute ground turkey with grass-fed ground beef if preferred.
  • Adjust the level of red chili flakes to customize spiciness.
  • Use a cast iron skillet or an oven-safe pan for safe transfer to the oven.
  • Make sure to cut the sweet potatoes into uniformly small pieces to ensure even cooking.
