- 1 1/2 lbs ground chicken
- 1 cup breadcrumbs
- 1/4 cup milk
- 1 egg
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 6 slices deli ham
- 6 slices Swiss cheese
- 1 tbsp Dijon mustard
- 2 tbsp chopped fresh parsley (optional for garnish)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
- In a large bowl, mix together ground chicken, breadcrumbs, milk, egg, garlic powder, onion powder, salt, and pepper until well combined.
- On a sheet of parchment paper, flatten the chicken mixture into a rectangle about 1/2 inch thick.
- Spread a thin layer of Dijon mustard over the surface.
- Layer the ham slices evenly over the meat, followed by the Swiss cheese slices.
- Carefully roll the meat up tightly into a loaf, using the parchment to help guide it. Seal the ends to keep the filling inside.
- Transfer the meatloaf to the prepared baking sheet or loaf pan, seam side down.
- Bake for 45-55 minutes, or until the internal temperature reaches 165°F (74°C).
- Let rest for 5-10 minutes before slicing. Garnish with parsley if desired.

- Use toothpicks to help keep the roll secure while baking if needed.
- Try adding a light breadcrumb or cheese topping for extra flavor and crunch.
- Store leftovers in the fridge for up to 3 days or freeze for longer storage.
