- 1 pound cooked, shredded chicken (rotisserie chicken works great)
- 1 tablespoon olive oil
- 1 tablespoon taco seasoning
- 1/2 cup black beans, drained and rinsed
- 1 bag (10-12 oz) tortilla chips
- 2 cups shredded cheddar or Mexican blend cheese
- 1/2 cup diced tomatoes
- 1/4 cup sliced black olives (optional)
- 1/4 cup sliced jalapeños (optional)
- 1/4 cup chopped green onions
- Fresh cilantro, for garnish
- Sour cream, salsa, and guacamole, for serving
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a skillet, heat olive oil over medium heat. Add shredded chicken and taco seasoning, stirring to coat. Cook for 3–4 minutes, until heated through.
- On the prepared baking sheet, spread tortilla chips in an even layer. Top with seasoned chicken, black beans, and shredded cheese.
- Bake for 8–10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and top with diced tomatoes, black olives, jalapeños, and green onions.
- Garnish with fresh cilantro and serve with sour cream, salsa, and guacamole on the side.
Notes
- Use any kind of cheese you like, such as Monterey Jack or queso blanco.
- For extra flavor, drizzle with hot sauce or your favorite salsa.
- Substitute with ground beef or turkey for a different twist.
