Description

Chicken Nachos are a delicious and satisfying dish made with crispy tortilla chips topped with seasoned chicken, melted cheese, beans, and a variety of fresh toppings—perfect for sharing at a party or as a quick meal.


Ingredients

  • 1 pound cooked, shredded chicken (rotisserie chicken works great)
  • 1 tablespoon olive oil
  • 1 tablespoon taco seasoning
  • 1/2 cup black beans, drained and rinsed
  • 1 bag (10-12 oz) tortilla chips
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup sliced jalapeños (optional)
  • 1/4 cup chopped green onions
  • Fresh cilantro, for garnish
  • Sour cream, salsa, and guacamole, for serving

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a skillet, heat olive oil over medium heat. Add shredded chicken and taco seasoning, stirring to coat. Cook for 3–4 minutes, until heated through.
  3. On the prepared baking sheet, spread tortilla chips in an even layer. Top with seasoned chicken, black beans, and shredded cheese.
  4. Bake for 8–10 minutes, or until the cheese is melted and bubbly.
  5. Remove from the oven and top with diced tomatoes, black olives, jalapeños, and green onions.
  6. Garnish with fresh cilantro and serve with sour cream, salsa, and guacamole on the side.

Notes

  • Use any kind of cheese you like, such as Monterey Jack or queso blanco.
  • For extra flavor, drizzle with hot sauce or your favorite salsa.
  • Substitute with ground beef or turkey for a different twist.
