Description

This Chicken Parmesan Lasagna Skillet is a delicious, one-pan meal that combines tender chicken pieces, savory marinara sauce, and oven-ready lasagna noodles cooked together in a skillet. Topped with a blend of mozzarella, Parmesan, and ricotta cheeses, this easy Italian-American dish is perfect for a comforting weeknight dinner and requires minimal cleanup.

Ingredients

Scale

Chicken and Seasoning

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 3 cloves garlic, minced

Sauce and Pasta

  • 2 cups marinara sauce
  • 1 cup water or chicken broth
  • 8 ounces oven-ready lasagna noodles, broken into pieces

Cheeses and Garnish

  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ½ cup ricotta cheese
  • 2 tablespoons chopped fresh basil (optional)

Instructions

  1. Prepare the Chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Season the chicken pieces with garlic powder, Italian seasoning, salt, and pepper. Add the chicken to the skillet and cook, stirring occasionally, for about 5–6 minutes until browned and mostly cooked through.
  2. Add Garlic: Add the minced garlic to the skillet with the chicken and cook for an additional minute until fragrant.
  3. Add Sauce and Noodles: Pour in the marinara sauce and water (or chicken broth). Stir to combine, then add the broken lasagna noodles, making sure they are mostly submerged in the liquid.
  4. Simmer: Cover the skillet with a lid or foil, reduce heat to medium, and simmer for 15–18 minutes, stirring occasionally, until the noodles are tender and fully cooked.
  5. Add Cheeses: Remove the skillet from heat. Stir in half of the shredded mozzarella and Parmesan cheese. Dollop spoonfuls of ricotta cheese over the top, then sprinkle with the remaining mozzarella and Parmesan cheeses.
  6. Melt the Cheese: Cover again for 2–3 minutes to allow the cheese to melt, or place the skillet under the broiler for 2 minutes until the cheese is bubbly and golden brown.
  7. Garnish and Serve: Sprinkle chopped fresh basil over the top for a fresh finish. Serve the skillet lasagna hot.

Notes

  • Substitute shredded rotisserie chicken for a quicker meal preparation.
  • For added texture and crispness, sprinkle breadcrumbs on top before broiling.
  • Use chicken broth in place of water for a richer flavor.
  • Ensure the skillet is oven-safe if using the broiler step.
