Description

These no-bake Chocolate Berry Bars combine fresh strawberries, blueberries, and raspberries layered with toasted almonds, coconut flakes, and chia seeds, all drizzled with rich melted dark chocolate. Perfectly refreshing and naturally sweetened, these bars are frozen to set into a deliciously healthy treat that’s great for snacks or dessert.

Ingredients

Scale

Fruits

  • 1 cup fresh strawberries, chopped into small pieces
  • ¾ cup fresh blueberries
  • ¾ cup fresh raspberries

Chocolate Mixture

  • ¾ cup dark chocolate chips
  • ¼ cup coconut oil

Toppings

  • 2 tablespoons coconut flakes
  • ¼ cup slivered almonds
  • 1 tablespoon chia seeds

Instructions

  1. Melt Chocolate: In a medium microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 1-minute increments, stirring thoroughly between each, until the mixture is fully melted and smooth. Set aside.
  2. Toast Almonds and Coconut: Preheat a large skillet over medium heat. Add the slivered almonds and coconut flakes. Toast them, stirring frequently, until they turn golden brown and aromatic. Remove from heat and set aside.
  3. Prepare Loaf Pan: Line a 9×5 inch loaf pan with parchment paper, ensuring enough overhang for easy removal later.
  4. Layer Berries and Toppings: Place the chopped strawberries, blueberries, and raspberries into the loaf pan in layers. Evenly sprinkle the toasted almonds, toasted coconut flakes, and chia seeds on top of the berries.
  5. Drizzle Chocolate: Pour the melted chocolate evenly over the layered berries and toppings. Tap the loaf pan gently on the counter a few times to help everything settle evenly.
  6. Freeze: Place the loaf pan in the freezer and freeze for approximately 7 hours, or until the bars are fully set and firm.
  7. Slice and Serve: Remove the loaf pan from the freezer. Using the parchment paper overhang, lift the frozen block onto a cutting board. Let it thaw for 2-3 minutes to soften slightly for easier slicing. Use a serrated knife to cut into 8 even bars. Serve and enjoy your refreshing Chocolate Berry Bars!

Notes

  • Make sure to toast the almonds and coconut flakes carefully to avoid burning, stirring frequently.
  • Let the bars thaw slightly before slicing to prevent cracking or crumbling.
  • Use high-quality dark chocolate chips for the best flavor and smooth texture.
  • Store bars in an airtight container in the freezer to keep them firm and fresh.
  • These bars are naturally gluten-free and vegetarian.
