For the Chocolate Cookies:
- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
For the Marshmallow Filling:
- 1 cup marshmallow creme
- 1/2 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 2 cups confectioners’ sugar
Instructions
- Make the Chocolate Cookies: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Cream together butter and sugar until light and fluffy. Beat in egg and vanilla. Gradually mix in dry ingredients alternating with buttermilk.
- Drop spoonfuls of batter onto prepared baking sheets. Bake for 10-12 minutes. Allow to cool completely.
- Make the Marshmallow Filling: In a bowl, beat marshmallow creme and butter until smooth. Add vanilla and confectioners’ sugar, beating until creamy.
- Spread or pipe filling onto the flat side of half the cookies. Top with remaining cookies to create whoopie pies.
In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
Notes
- You can add a tablespoon of espresso powder to enhance the chocolate flavor.
