For the Chocolate Cookies:

  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk

For the Marshmallow Filling:

  • 1 cup marshmallow creme
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 2 cups confectioners’ sugar

Instructions

  1. Make the Chocolate Cookies: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.

  3. Cream together butter and sugar until light and fluffy. Beat in egg and vanilla. Gradually mix in dry ingredients alternating with buttermilk.
  4. Drop spoonfuls of batter onto prepared baking sheets. Bake for 10-12 minutes. Allow to cool completely.
  5. Make the Marshmallow Filling: In a bowl, beat marshmallow creme and butter until smooth. Add vanilla and confectioners’ sugar, beating until creamy.
  6. Spread or pipe filling onto the flat side of half the cookies. Top with remaining cookies to create whoopie pies.

Notes

  • You can add a tablespoon of espresso powder to enhance the chocolate flavor.
