Cilantro Lime Chicken is a zesty and flavorful dish made with marinated chicken breasts infused with fresh cilantro, lime juice, garlic, and spices, then grilled or pan-seared to perfection.

- 4 boneless, skinless chicken breasts
- 1/4 cup fresh lime juice (about 2 limes)
- 2 tablespoons lime zest
- 1/4 cup chopped fresh cilantro
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a bowl, whisk together lime juice, lime zest, chopped cilantro, olive oil, garlic, cumin, chili powder, paprika, salt, and pepper.
- Place chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Seal and refrigerate for at least 30 minutes, preferably 2 hours.
- Preheat grill or skillet over medium-high heat.
- Remove chicken from marinade and discard excess marinade.
- Grill or sear the chicken for 6-7 minutes per side or until fully cooked and internal temperature reaches 165°F (74°C).
- Let the chicken rest for 5 minutes before slicing.
- Garnish with additional chopped cilantro and lime wedges if desired. Serve warm.
Notes
- For extra flavor, marinate the chicken overnight.
- This recipe works great with chicken thighs as well.
- Serve with rice, tacos, or salad for a complete meal.
