Description

Cilantro Lime Chicken is a zesty and flavorful dish made with marinated chicken breasts infused with fresh cilantro, lime juice, garlic, and spices, then grilled or pan-seared to perfection.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup fresh lime juice (about 2 limes)
  • 2 tablespoons lime zest
  • 1/4 cup chopped fresh cilantro
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a bowl, whisk together lime juice, lime zest, chopped cilantro, olive oil, garlic, cumin, chili powder, paprika, salt, and pepper.
  2. Place chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Seal and refrigerate for at least 30 minutes, preferably 2 hours.
  3. Preheat grill or skillet over medium-high heat.
  4. Remove chicken from marinade and discard excess marinade.
  5. Grill or sear the chicken for 6-7 minutes per side or until fully cooked and internal temperature reaches 165°F (74°C).
  6. Let the chicken rest for 5 minutes before slicing.
  7. Garnish with additional chopped cilantro and lime wedges if desired. Serve warm.

Notes

  • For extra flavor, marinate the chicken overnight.
  • This recipe works great with chicken thighs as well.
  • Serve with rice, tacos, or salad for a complete meal.
