Description

- 1 cup long-grain white rice
- 2 cups water or chicken broth
- 1 tablespoon olive oil or butter
- 1/2 teaspoon salt
- 1 lime, zested and juiced
- 1/3 cup fresh cilantro, chopped
Instructions
- In a medium saucepan, bring water or broth, olive oil, and salt to a boil.
- Stir in the rice, reduce heat to low, cover, and simmer for 15–18 minutes or until rice is tender and liquid is absorbed.
- Remove from heat and let sit, covered, for 5 minutes.
- Fluff rice with a fork, then stir in lime zest, lime juice, and chopped cilantro.
- Serve warm as a side dish or base for burrito bowls.
Notes
- Use jasmine or basmati rice for extra fragrance and fluffiness.
- Add a small minced garlic clove while cooking for extra flavor.
