Description

Cilantro Lime Rice is a light and fluffy side dish infused with fresh lime juice and chopped cilantro, perfect for pairing with tacos, burritos, grilled meats, or bowls.


Ingredients

  • 1 cup long-grain white rice
  • 2 cups water or chicken broth
  • 1 tablespoon olive oil or butter
  • 1/2 teaspoon salt
  • 1 lime, zested and juiced
  • 1/3 cup fresh cilantro, chopped

Instructions

  1. In a medium saucepan, bring water or broth, olive oil, and salt to a boil.
  2. Stir in the rice, reduce heat to low, cover, and simmer for 15–18 minutes or until rice is tender and liquid is absorbed.
  3. Remove from heat and let sit, covered, for 5 minutes.
  4. Fluff rice with a fork, then stir in lime zest, lime juice, and chopped cilantro.
  5. Serve warm as a side dish or base for burrito bowls.
