Ingredients
-
1 box (18.3 oz) brownie mix
-
1/4 cup vegetable oil
-
2 large eggs
-
1/2 cup chocolate chips (optional)
-
1 tsp vanilla extract (optional)
Instructions
-
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
-
Mix ingredients: In a large bowl, combine the brownie mix, vegetable oil, and eggs. Stir until well combined. If desired, add the chocolate chips and vanilla extract, and mix until evenly distributed.
-
Scoop dough: Using a tablespoon or cookie scoop, drop rounded portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
-
Bake for 8-10 minutes, or until the edges are set, and the center is soft but not gooey. Be careful not to overbake for the fudgy texture.
-
Cool: Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
-
Serve and enjoy your chewy, fudgy cookies!
Notes
-
You can customize the cookies by adding other mix-ins such as nuts, mini marshmallows, or caramel bits.
-
For an even chewier cookie, slightly underbake them, and let them set as they cool.
-
If you’d like thicker cookies, refrigerate the dough for about 15-20 minutes before baking
