Description

These quick and easy cookies are made with brownie mix, giving them a rich, fudgy texture that’s absolutely irresistible. With minimal ingredients and a short prep time, they’re perfect for a last-minute treat or whenever you’re craving something sweet!


Ingredients

  • 1 box (18.3 oz) brownie mix

  • 1/4 cup vegetable oil

  • 2 large eggs

  • 1/2 cup chocolate chips (optional)

 

  • 1 tsp vanilla extract (optional)


Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.

  2. Mix ingredients: In a large bowl, combine the brownie mix, vegetable oil, and eggs. Stir until well combined. If desired, add the chocolate chips and vanilla extract, and mix until evenly distributed.

  3. Scoop dough: Using a tablespoon or cookie scoop, drop rounded portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.

  4. Bake for 8-10 minutes, or until the edges are set, and the center is soft but not gooey. Be careful not to overbake for the fudgy texture.

  5. Cool: Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

  6. Serve and enjoy your chewy, fudgy cookies!


Notes

  • You can customize the cookies by adding other mix-ins such as nuts, mini marshmallows, or caramel bits.

  • For an even chewier cookie, slightly underbake them, and let them set as they cool.

 

  • If you’d like thicker cookies, refrigerate the dough for about 15-20 minutes before baking
