Instructions
- Preheat oven to 400°F (200°C) or prepare an air fryer.
- Cut each ear of corn into quarters lengthwise to create rib-like strips.
- In a small bowl, mix olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper.
- Brush the seasoning mixture onto all sides of the corn ribs.
- Place the corn ribs on a baking sheet lined with parchment paper or in an air fryer basket.
- Bake for 20-25 minutes or air fry for 12-15 minutes until the edges are crispy and curled.
- Serve hot with lime wedges and a sprinkle of chopped cilantro, if desired.
Notes
- Use a sharp knife to cut the corn; microwaving the ears for a minute beforehand can help soften them.
