Description

Cranberry Pecan Chicken Salad with Poppy Seed Dressing is a refreshing and flavorful salad loaded with tender chicken, crunchy pecans, sweet dried cranberries, and a creamy, tangy homemade poppy seed dressing.


Ingredients

  • 1/3 cup dried cranberries
  • 1/3 cup chopped pecans
  • 1/2 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/2 cup mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tsp poppy seeds
  • Salt and black pepper, to taste
  • Optional: mixed greens or croissants, for serving

Instructions

  1. In a large bowl, combine chicken, cranberries, pecans, celery, and red onion.
  2. In a separate small bowl, whisk together mayonnaise, apple cider vinegar, honey, poppy seeds, salt, and pepper until smooth.
  3. Pour the dressing over the chicken mixture and stir until evenly coated.
  4. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
  5. Serve on a bed of greens, in a sandwich, or in a croissant, as desired.

Notes

  • Use rotisserie chicken for a quick and easy shortcut.
