- 2 cups cooked chicken, shredded or chopped
- 1/3 cup dried cranberries
- 1/3 cup chopped pecans
- 1/2 cup celery, finely chopped
- 1/4 cup red onion, finely chopped
- 1/2 cup mayonnaise
- 1 tbsp apple cider vinegar
- 1 tbsp honey
- 1 tsp poppy seeds
- Salt and black pepper, to taste
- Optional: mixed greens or croissants, for serving
Instructions
- In a large bowl, combine chicken, cranberries, pecans, celery, and red onion.
- In a separate small bowl, whisk together mayonnaise, apple cider vinegar, honey, poppy seeds, salt, and pepper until smooth.
- Pour the dressing over the chicken mixture and stir until evenly coated.
- Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
- Serve on a bed of greens, in a sandwich, or in a croissant, as desired.
Notes
- Use rotisserie chicken for a quick and easy shortcut.
- Lighten the dressing by using Greek yogurt in place of some or all of the mayo.
- Add sliced grapes or chopped apples for extra sweetness and texture.
