Creamed Chipped Beef on Toast, also known as SOS, is a classic comfort food dish made with dried beef in a creamy white sauce served over toasted bread. It’s rich, savory, and incredibly satisfying.

- 2 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 2 cups whole milk
- 1 jar (2.5 oz) dried beef, chopped
- 1/4 tsp black pepper
- Pinch of cayenne pepper (optional)
- 4 slices of bread, toasted
Instructions
- In a medium saucepan over medium heat, melt the butter.
- Whisk in the flour and cook for 1–2 minutes to form a roux, stirring constantly.
- Gradually whisk in the milk, continuing to stir until the sauce thickens, about 5 minutes.
- Add the chopped dried beef and black pepper (and cayenne, if using). Stir and simmer for another 2–3 minutes until heated through.
- Serve the creamed beef hot over slices of toast.
Notes
- Rinse dried beef briefly to reduce saltiness if desired.
- Serve over biscuits or mashed potatoes for variation.
- Add sautéed onions or mushrooms for extra flavor.
