- 1 lb ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (10 oz) can diced tomatoes with green chilies
- 1 (8 oz) package cream cheese, softened
- 1 cup beef broth
- 1 packet taco seasoning
- 1 tsp chili powder
- Salt and pepper, to taste
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and cook until translucent, about 3-4 minutes.
- Add garlic and ground beef, cooking until beef is browned and fully cooked. Drain excess fat.
- Stir in taco seasoning and chili powder, mixing well to coat the meat.
- Add black beans, corn, and diced tomatoes with green chilies. Stir to combine.
- Pour in beef broth and bring to a simmer.
- Reduce heat and stir in cream cheese until melted and fully incorporated.
- Let the soup simmer for another 10-15 minutes, stirring occasionally.
- Season with salt and pepper to taste.
- Serve hot with optional toppings like shredded cheese, sour cream, or tortilla chips.
Notes
- For a lighter version, use ground turkey or chicken instead of beef.
