Description

A rich and flavorful creamy taco soup made with ground beef, beans, corn, and a blend of Mexican spices, perfect for a cozy meal.


Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 (8 oz) package cream cheese, softened
  • 1 cup beef broth
  • 1 packet taco seasoning
  • 1 tsp chili powder
  • Salt and pepper, to taste
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent, about 3-4 minutes.
  3. Add garlic and ground beef, cooking until beef is browned and fully cooked. Drain excess fat.
  4. Stir in taco seasoning and chili powder, mixing well to coat the meat.
  5. Add black beans, corn, and diced tomatoes with green chilies. Stir to combine.
  6. Pour in beef broth and bring to a simmer.
  7. Reduce heat and stir in cream cheese until melted and fully incorporated.
  8. Let the soup simmer for another 10-15 minutes, stirring occasionally.
  9. Season with salt and pepper to taste.
  10. Serve hot with optional toppings like shredded cheese, sour cream, or tortilla chips.
