Description
Crispy Cheesy Hash Browns are golden brown potato patties packed with gooey cheese and crisp edges, perfect as a breakfast side or savory snack.

- 4 medium russet potatoes, peeled
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup finely chopped onion
- 2 tbsp all-purpose flour
- 1 egg, beaten
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2–3 tbsp vegetable oil (for frying)
Instructions
- Grate the potatoes and squeeze out as much moisture as possible using a clean kitchen towel or cheesecloth.
- In a large bowl, combine the grated potatoes, cheddar cheese, Parmesan, chopped onion, flour, beaten egg, salt, and pepper. Mix well.
- Heat oil in a large skillet over medium-high heat.
- Scoop about 1/4 cup of the potato mixture and flatten into a patty. Place into the hot skillet.
- Cook for 3–4 minutes on each side, or until golden brown and crispy.
- Transfer to a paper towel-lined plate to drain excess oil.
- Repeat with remaining mixture, adding more oil as needed.
- Serve hot, optionally with sour cream or ketchup.
Notes
- Be sure to squeeze the potatoes very dry for the crispiest result.
- Try mixing in herbs like chives or parsley for added flavor.
- These can be made ahead and reheated in the oven for extra crunch.
