Description

Crispy Cheesy Hash Browns are golden brown potato patties packed with gooey cheese and crisp edges, perfect as a breakfast side or savory snack.


Ingredients

  • 4 medium russet potatoes, peeled
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup finely chopped onion
  • 2 tbsp all-purpose flour
  • 1 egg, beaten
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 23 tbsp vegetable oil (for frying)

Instructions

  1. Grate the potatoes and squeeze out as much moisture as possible using a clean kitchen towel or cheesecloth.
  2. In a large bowl, combine the grated potatoes, cheddar cheese, Parmesan, chopped onion, flour, beaten egg, salt, and pepper. Mix well.
  3. Heat oil in a large skillet over medium-high heat.
  4. Scoop about 1/4 cup of the potato mixture and flatten into a patty. Place into the hot skillet.
  5. Cook for 3–4 minutes on each side, or until golden brown and crispy.
  6. Transfer to a paper towel-lined plate to drain excess oil.
  7. Repeat with remaining mixture, adding more oil as needed.
  8. Serve hot, optionally with sour cream or ketchup.

Notes

  • Be sure to squeeze the potatoes very dry for the crispiest result.
  • Try mixing in herbs like chives or parsley for added flavor.
  • These can be made ahead and reheated in the oven for extra crunch.
