Description

A hearty and flavorful crockpot meatloaf that’s easy to prepare and perfect for a comforting dinner. Slow-cooked to perfection, this meatloaf stays moist and tender with a delicious glaze on top.


Ingredients

  • 2 lbs ground beef
  • 1 cup breadcrumbs
  • 2 eggs
  • 1/2 cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/2 cup ketchup (for glaze)
  • 2 tbsp brown sugar (for glaze)
  • 1 tbsp mustard (for glaze)

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, eggs, milk, onion, garlic, 1/4 cup ketchup, Worcestershire sauce, salt, pepper, and thyme. Mix until well combined.
  2. Shape the mixture into a loaf and place it in the crockpot.
  3. In a small bowl, mix 1/2 cup ketchup, brown sugar, and mustard to make the glaze.
  4. Spread the glaze evenly over the meatloaf.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until fully cooked (internal temperature should reach 160°F).
  6. Optional: Carefully transfer the meatloaf to a baking sheet and broil for 2-3 minutes to caramelize the glaze.
  7. Let rest for 10 minutes before slicing and serving.

Notes

  • You can substitute ground turkey or a beef/pork mix if preferred.
  • Use parchment or foil in the bottom of the crockpot for easier cleanup.
  • Letting the meatloaf rest helps retain its juices.
