Decadent Twix Cookies are inspired by the classic candy bar, layered with buttery shortbread, soft caramel, and smooth chocolate. They’re rich, chewy, and totally irresistible—perfect for parties, holidays, or anytime you want to treat yourself!
Ingredients
For the Shortbread Cookies:

1 cup (2 sticks) unsalted butter, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

2 cups all-purpose flour

1/4 teaspoon salt
For the Caramel Layer:

1 (11-ounce) bag soft caramels (about 35), unwrapped

2 tablespoons heavy cream
For the Chocolate Layer:

1 1/2 cups milk chocolate chips (or semi-sweet)

1 tablespoon coconut oil or vegetable oil (optional, for shine and smoothness)
Instructions

Make the Cookies:
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, cream the butter and powdered sugar until smooth. Mix in the vanilla.
Add flour and salt; mix until a soft dough forms.
Scoop and roll into 1-inch balls, then flatten slightly on the baking sheet.
Bake for 10–12 minutes, or until edges are just golden. Let cool completely. -
Add the Caramel Layer:
In a microwave-safe bowl, combine caramels and heavy cream. Microwave in 30-second intervals, stirring until melted and smooth.
Spoon a bit of caramel onto each cookie and spread it gently. Let it set for 10–15 minutes.

Top with Chocolate:
Melt the chocolate chips (and oil, if using) in the microwave in 30-second intervals, stirring until smooth.
Spoon or drizzle over the caramel layer and let set at room temperature or in the fridge.
