- 1 cup cooked protein (grilled chicken, tofu, or shrimp)
- 1/2 cup diced cucumber
- 1/2 cup cherry tomatoes, halved
- 1/2 avocado, sliced
- 1/4 cup shredded carrots
- 2 tbsp hummus or tahini dressing
- Fresh lemon wedges, for serving
- Chopped parsley or cilantro, for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add garlic and cook for 30 seconds until fragrant.
- Add cauliflower rice, salt, and pepper. Sauté for 5–7 minutes, stirring occasionally, until tender and lightly golden. Remove from heat.
- Divide cooked cauliflower rice among serving bowls.
- Top each bowl with your choice of protein, cucumber, tomatoes, avocado, and shredded carrots.
- Add a dollop of hummus or drizzle with tahini dressing.
- Garnish with parsley or cilantro, and serve with lemon wedges on the side.
