- 8 oz spaghetti noodles
- 2 cups cooked chicken, shredded
- 1 tbsp olive oil
- 1 small onion, chopped
- 1/2 green bell pepper, chopped
- 1 can (10.5 oz) cream of mushroom soup
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10 oz) diced tomatoes with green chilies
- 2 cups shredded cheddar cheese, divided
- 1/2 tsp garlic powder
- 1/2 tsp black pepper
- Salt to taste
Instructions
- Preheat oven to 350°F (175°C).
- Cook the spaghetti noodles according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add onion and bell pepper, cooking until softened.
- Add the cooked chicken, cream of mushroom soup, cream of chicken soup, diced tomatoes with green chilies, garlic powder, pepper, and 1 cup of shredded cheddar cheese. Mix until well combined.
- Add the cooked spaghetti to the mixture and toss to coat evenly.
- Transfer the mixture to a greased 9×13 inch baking dish and top with the remaining cheese.
- Bake for 25–30 minutes, or until the cheese is melted and bubbly.
- Serve hot and enjoy.
Notes
- Use rotisserie chicken for convenience.
- Can be made ahead and stored in the refrigerator for up to 2 days before baking.
- Try adding mushrooms or jalapeños for extra flavor.
