Description

This easy and delicious chicken spaghetti recipe is a comforting classic made with tender chicken, spaghetti noodles, creamy cheese sauce, and a touch of spice. Perfect for a family dinner or potluck.


Ingredients

  • 8 oz spaghetti noodles
  • 2 cups cooked chicken, shredded
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 1/2 green bell pepper, chopped
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10 oz) diced tomatoes with green chilies
  • 2 cups shredded cheddar cheese, divided
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • Salt to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook the spaghetti noodles according to package instructions. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add onion and bell pepper, cooking until softened.
  4. Add the cooked chicken, cream of mushroom soup, cream of chicken soup, diced tomatoes with green chilies, garlic powder, pepper, and 1 cup of shredded cheddar cheese. Mix until well combined.
  5. Add the cooked spaghetti to the mixture and toss to coat evenly.
  6. Transfer the mixture to a greased 9×13 inch baking dish and top with the remaining cheese.
  7. Bake for 25–30 minutes, or until the cheese is melted and bubbly.
  8. Serve hot and enjoy.

Notes

  • Use rotisserie chicken for convenience.
  • Can be made ahead and stored in the refrigerator for up to 2 days before baking.
  • Try adding mushrooms or jalapeños for extra flavor.
