- 4 boneless, skinless chicken breasts
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 2 tbsp olive oil
- 2 tbsp butter
- 8 oz mushrooms, sliced (white or cremini)
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese (optional)
- 1 tsp fresh thyme or 1/2 tsp dried thyme
- Chopped parsley, for garnish
Instructions
- Season chicken with salt, pepper, and garlic powder on both sides.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken for 5–6 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, reduce heat to medium and add butter. Add mushrooms and cook for 5–7 minutes until browned and tender.
- Add garlic and thyme and sauté for 1 minute until fragrant.
- Pour in chicken broth and stir, scraping any browned bits from the pan. Simmer for 2 minutes.
- Add heavy cream and Parmesan (if using). Stir and let simmer until sauce thickens slightly, about 3–4 minutes.
- Return chicken to the pan and spoon sauce over the top. Simmer for 2–3 minutes to heat through.
- Garnish with chopped parsley and serve warm with mashed potatoes, rice, or pasta.
Notes
- Use chicken thighs for an even juicier result.
- Add a splash of white wine for extra depth of flavor.
- For a lighter version, use half-and-half or evaporated milk.
