Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 8 oz mushrooms, sliced (white or cremini)
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 tsp fresh thyme or 1/2 tsp dried thyme
  • Chopped parsley, for garnish

Instructions

  1. Season chicken with salt, pepper, and garlic powder on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 5–6 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same skillet, reduce heat to medium and add butter. Add mushrooms and cook for 5–7 minutes until browned and tender.
  4. Add garlic and thyme and sauté for 1 minute until fragrant.
  5. Pour in chicken broth and stir, scraping any browned bits from the pan. Simmer for 2 minutes.
  6. Add heavy cream and Parmesan (if using). Stir and let simmer until sauce thickens slightly, about 3–4 minutes.
  7. Return chicken to the pan and spoon sauce over the top. Simmer for 2–3 minutes to heat through.
  8. Garnish with chopped parsley and serve warm with mashed potatoes, rice, or pasta.

Notes

  • Use chicken thighs for an even juicier result.
  • Add a splash of white wine for extra depth of flavor.
  • For a lighter version, use half-and-half or evaporated milk.
