- 1 1/4 cups all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, cold and cubed
- 1 large egg yolk
- 2 tablespoons cold water
- 1 cup granulated sugar
- 6 tablespoons unsalted butter (for caramel)
- 1/2 cup heavy cream (for caramel)
- 1 teaspoon sea salt
- 1/2 cup heavy cream (for ganache)
- 4 oz semisweet chocolate, chopped
- Sea salt flakes, for garnish
Instructions
- Preheat oven to 350°F (175°C). Grease a mini tart pan.
- In a bowl, whisk together flour, cocoa powder, and powdered sugar.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Add egg yolk and cold water, mix until dough forms.
- Press dough into tart pans and prick with a fork. Bake for 12-15 minutes. Cool completely.
- In a saucepan, melt granulated sugar over medium heat, stirring until it turns amber.
- Add butter and stir until melted, then pour in heavy cream and sea salt. Simmer for 1-2 minutes.
- Pour caramel into cooled tart shells. Chill for 30 minutes.
- Heat cream for ganache until just simmering, pour over chopped chocolate. Let sit, then stir until smooth.
- Top tarts with ganache and chill until set. Sprinkle with sea salt flakes before serving.
