- 8 oz semi-sweet or dark chocolate, finely chopped
- 1/2 cup heavy cream
- 1/2 teaspoon vanilla extract

Instructions
- Place chopped chocolate in a heatproof bowl.
- In a small saucepan, heat cream over medium heat until it just begins to simmer (do not boil).
- Pour hot cream over the chocolate and let sit for 2–3 minutes to soften. Then stir gently until smooth and glossy.
- Stir in vanilla extract.
- Cover and refrigerate the mixture (ganache) for 1–2 hours until firm enough to scoop.
- Using a small spoon or melon baller, scoop out the ganache and roll into balls with your hands.
- Roll truffles in your choice of cocoa powder, chopped nuts, or coconut.
- Refrigerate until firm. Serve chilled or at room temperature.
