- 1 lb boneless, skinless chicken breasts or thighs
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups cooked rice or quinoa
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup kalamata olives (optional)
- 1/4 cup crumbled feta cheese
- 1/2 cup tzatziki sauce
- Fresh parsley or dill, for garnish (optional)
Instructions
- In a bowl or zip-top bag, combine olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken and marinate for at least 30 minutes (up to overnight).
- Grill or cook chicken in a skillet over medium heat for 5–6 minutes per side, or until cooked through. Let rest, then slice.
- Divide rice or quinoa between bowls.
- Top each bowl with sliced chicken, tomatoes, cucumber, red onion, olives, and feta.
- Drizzle with tzatziki sauce and garnish with fresh herbs if desired. Serve immediately.
