Ingredients

Units Scale
  • 2 cups cooked shredded chicken
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • 1 cup cooked rice
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup shredded cheddar or Monterey Jack cheese
  • 1/4 cup salsa or pico de gallo
  • 1/4 cup sour cream or Greek yogurt
  • 1 avocado, sliced (optional)
  • 2 large flour tortillas

Instructions

  1. In a skillet, heat olive oil over medium heat. Add shredded chicken and season with chili powder, cumin, smoked paprika, cayenne, salt, and pepper.
  2. Cook for 3–4 minutes, stirring to coat the chicken evenly with spices. Set aside.
  3. Warm tortillas in a skillet or microwave until soft and pliable.
  4. To assemble, layer rice, black beans, spicy chicken, cheese, salsa, sour cream, and avocado (if using) onto each tortilla.
  5. Fold in the sides and roll up tightly to form a burrito.
  6. Optional: Toast burritos in a hot skillet for 1–2 minutes per side for a crispy exterior.
  7. Slice and serve warm with extra salsa or sour cream if desired.

Notes

  • Use rotisserie chicken for a quick shortcut.
  • Adjust spice level by increasing or reducing cayenne pepper.
  • Wrap in foil for an easy on-the-go lunch.
  • Add lettuce, jalapeños, or corn for extra flavor and texture.
