Description

Elote, or Mexican Street Corn, is a delicious and flavorful Mexican snack made with grilled corn on the cob, topped with a creamy mayonnaise-based sauce, cheese, chili powder, and fresh lime. It’s a perfect street food that’s both savory and spicy.


Ingredients

  • 4 ears of corn, husked
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup cotija cheese, crumbled (or Parmesan as a substitute)
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1 lime, cut into wedges
  • Salt to taste
  • Cayenne pepper (optional, for extra heat)

Instructions

  1. Preheat a grill or grill pan over medium heat.
  2. Grill the corn for about 10-12 minutes, turning occasionally, until the kernels are tender and have grill marks.
  3. While the corn is grilling, in a small bowl, mix together the mayonnaise and sour cream until smooth.
  4. Once the corn is done, remove it from the grill and let it cool slightly.
  5. Brush the mayonnaise and sour cream mixture generously over each ear of corn.
  6. Sprinkle the crumbled cotija cheese over the corn, followed by chili powder, smoked paprika, and salt to taste.
  7. Finish by squeezing fresh lime juice over the top of the corn.
  8. If desired, sprinkle cayenne pepper for extra heat and serve with extra lime wedges on the side.

Notes

  • You can use other types of cheese, such as feta or even cheddar, but cotija gives the most authentic flavor.
  • For a smoky flavor, try grilling the corn with the husk on first, then removing the husk just before applying the toppings.
  • To make this dish vegan, replace the mayonnaise and sour cream with vegan alternatives and use dairy-free cheese.
  • If you prefer a less spicy version, you can omit the cayenne pepper and adjust the chili powder to taste.
