Description

  • 6 (9-inch) whole wheat tortillas
  • 1¼ cups shredded reduced-fat sharp Cheddar cheese


Instructions

  1. Sauté Vegetables: Heat the olive oil in a skillet over medium-high heat. Add the chopped red bell pepper, zucchini, yellow squash, red onion, and mushrooms to the skillet. Cook for about 7 minutes, stirring occasionally, until the vegetables are tender and slightly caramelized.
  2. Set Aside Vegetables: Transfer the cooked vegetables from the skillet to a bowl and set aside to prepare for assembly.
  3. Prepare Quesadilla Base: Lightly coat the skillet with cooking spray and heat over medium heat. Place one whole wheat tortilla in the pan. Sprinkle half of the shredded cheese evenly over one half of the tortilla, then add a portion of the cooked vegetables on top of the cheese. Sprinkle more cheese over the vegetables to help the quesadilla stick together, and then place a second tortilla on top to form a sandwich.
  4. Cook Quesadilla: Cook the quesadilla for 2 to 3 minutes on one side, or until the bottom tortilla is golden brown and crispy. Carefully flip the quesadilla using a spatula, and cook the other side for another 2 to 3 minutes until it is also golden brown and the cheese inside has melted completely.
  5. Serve: Remove the quesadilla from the skillet and place it on a cutting board. Cut it into 8 triangles using a sharp knife or pizza cutter. Serve warm and enjoy!
