For the Pie Crust:
- 1 1/2 cups all-purpose flour

- 1/2 cup cold unsalted butter, diced
- 4–6 tablespoons ice water
For the Filling:
- 1 pound medium shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 cup corn kernels
- 1/2 cup heavy cream
- 1/2 cup chicken broth
- 1/2 teaspoon paprika
- Salt and pepper to taste
Instructions
- Prepare the Pie Crust: In a food processor, pulse the flour and salt. Add the butter and pulse until the mixture resembles coarse crumbs. Gradually add the ice water until the dough comes together. Shape into a disk, wrap in plastic, and chill for 30 minutes.
- Make the Filling: Preheat the oven to 375°F. In a skillet, sauté the shrimp until pink, then remove and set aside. In the same skillet, sauté the onion, pepper, and garlic until softened. Add the corn, cream, broth, paprika, salt, and pepper. Simmer until thickened.
- Assemble the Pie: Roll out the dough and line a pie dish. Fill with the shrimp mixture. Top with another layer of crust, seal, and vent. Bake for 30-35 minutes until golden brown.
- Serve: Allow the pie to cool slightly before slicing and serving.
