For the Filling:

  • 1 pound medium shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup corn kernels
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Prepare the Pie Crust: In a food processor, pulse the flour and salt. Add the butter and pulse until the mixture resembles coarse crumbs. Gradually add the ice water until the dough comes together. Shape into a disk, wrap in plastic, and chill for 30 minutes.
