Description

Fresno Poppers are a spicy, cheesy appetizer made with vibrant red Fresno chilies stuffed with a creamy cheese filling, then baked or grilled to perfection. A flavorful twist on classic jalapeño poppers.


Ingredients

  • 10 Fresno chilies
  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cooked bacon bits (optional for non-vegetarian)
  • 1 green onion, finely chopped
  • 1/4 tsp garlic powder
  • 1/4 tsp smoked paprika
  • Salt and pepper to taste
  • Olive oil spray or drizzle for baking

Instructions

  1. Preheat oven to 400°F (200°C) or heat grill to medium-high.
  2. Slice Fresno chilies in half lengthwise and remove seeds and membranes (use gloves if sensitive to spice).
  3. In a bowl, mix cream cheese, cheddar cheese, bacon bits (if using), green onion, garlic powder, smoked paprika, salt, and pepper until well combined.
  4. Stuff each chili half with the cheese mixture.
  5. Place on a baking sheet lined with parchment paper or grill-safe tray, and lightly spray or drizzle with olive oil.
  6. Bake or grill for 15–18 minutes, until the peppers are tender and the cheese is bubbly and golden.
  7. Let cool slightly before serving. Enjoy warm.

Notes

  • Make it vegetarian by omitting bacon.
  • Can be prepped ahead and baked just before serving.
  • Top with a sprinkle of fresh herbs or hot sauce for extra flavor.
