Description
Fresno Poppers are a spicy, cheesy appetizer made with vibrant red Fresno chilies stuffed with a creamy cheese filling, then baked or grilled to perfection. A flavorful twist on classic jalapeño poppers.

- 10 Fresno chilies
- 4 oz cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 1/4 cup cooked bacon bits (optional for non-vegetarian)
- 1 green onion, finely chopped
- 1/4 tsp garlic powder
- 1/4 tsp smoked paprika
- Salt and pepper to taste
- Olive oil spray or drizzle for baking
Instructions
- Preheat oven to 400°F (200°C) or heat grill to medium-high.
- Slice Fresno chilies in half lengthwise and remove seeds and membranes (use gloves if sensitive to spice).
- In a bowl, mix cream cheese, cheddar cheese, bacon bits (if using), green onion, garlic powder, smoked paprika, salt, and pepper until well combined.
- Stuff each chili half with the cheese mixture.
- Place on a baking sheet lined with parchment paper or grill-safe tray, and lightly spray or drizzle with olive oil.
- Bake or grill for 15–18 minutes, until the peppers are tender and the cheese is bubbly and golden.
- Let cool slightly before serving. Enjoy warm.
Notes
- Make it vegetarian by omitting bacon.
- Can be prepped ahead and baked just before serving.
- Top with a sprinkle of fresh herbs or hot sauce for extra flavor.
